The puntarelle cutter is made from layers of birch plywood and thin, stainless steel wires formed into a criss-cross pattern. 

Puntarelle is a type of chicory grown in Italy. The young shoots are pushed through the wooden slicer, rivet side up, cutting them thinly longitudinally. The sliced puntarelle is then soaked in ice water to make them curl, ready to be tossed in an anchovy dressing to make the famous Puntarelle alla Romana salad.
